Shrimp Saganki with Feta Cheese
Selo Olive Oil
1 kg shrimp (peeled and deveined)
2 cans of whole peeled tomatoes
3 cloves garlic, crushed and diced
2 shallots, julienned
4 tbsp Croatian extra virgin olive oil
Red pepper flakes
Salt and pepper to taste
Sautee garlic and shallots until transparent, add red pepper flakes and stir
Add shrimp along with two tablespoons olive oil, stirring occasionally until seared
Add in two cans of whole peeled tomatoes. Split the tomatoes with a wooden spatula and stir, integrating into the dish.
Season with salt and pepper to taste
Add feta cheese and allow it to melt, stirring if necessary
Serve with fresh basil leaves and enjoy!
