- 8 lamb chops
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 cup fresh mint leaves
- 1/2 cup fresh parsley leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 1 garlic clove, minced
1/4 cup Croatian olive oil
- Salt and pepper to taste
- Preheat the grill to medium-high heat.
- In a small bowl, mix together the olive oil, salt, black pepper, oregano, and thyme.

- Pulse the mixture until it is finely chopped.
- With the food processor running, slowly pour in the olive oil until the mixture is well combined and forms a smooth paste.
