Alternatively, you can do an entirely cold process of extraction. Simply place the zest and the olive oil in a dark glass container for anywhere between ten days and a month. The longer the zest spends in the oil, the more developed the taste will be!

When you hear the word Italian relating to food you know that it will be good! ¾ cup olive oil 1 cup brown sugar 3 large eggs ½ cup milk 2 cups of self-raising flour 1 tablespoon of lemon zest 2 tablespoons of lemon juice a pinch of salt and nutmeg
  1. Preheat the oven to 350ºF. Oil a 9x5 loaf pan and line it with parchment paper.
  2. In a large bowl, start by beating the eggs with a high-speed mixer. Add the sugar, the spices, and the lemon zest and lemon juice.
  3. Slowly add the olive oil, the milk and the flour. Fold the flour in last and do it as gently as possible. 4. Pour the batter into your pan and place it in the oven for around an hour. You want to check in on the cake with a toothpick around the 50-minute mark.
  4. Once the pound cake is baked, take it out of the pan immediately and place it on a wire rack. Leave it to cool for around 20 minutes and lightly dust it with powdered sugar before serving!
